Sadler's Smokehouse Pork Loin Fried Rice

INGREDIENTS
8-12oz Sadler’s Smokehouse Pit Smoked Pork Loin, Cut into Bite-Sized Pieces
1 C Peas and Carrots
2 Tablespoon Vegetable Oil
2 Eggs, Lightly Beaten
2 Tablespoon Minced Garlic
2 Tablespoon Minced Ginger
1/2 Teaspoon Cinnamon
1/4 Cups Soy Sauce
3 Green Onions, Chopped
2 1/2 Cups Rice, Cooked According to Package Directions

Servings: 4-6, Prep Time: 5 minutes, Total Time: 20 minutes

DIRECTIONS
In a large pan heat oil over medium heat. Add eggs and cook until cooked and scrambled. Remove and set aside. In the same pan, add garlic and ginger and cook 2-3 minutes. Add vegetables and cook until tender. Add cinnamon, soy sauce and pork. Cook until pork is hot throughout, 4-5 minutes. Add rice, eggs and green onion and cook another 2-3 minutes. Allow to cool 2-3 minutes before serving.
